Here is a brief overview of the Ol\u00e9ron specialties that have made the region&#039;s gastronomic reputation.\u00a0<strong>Charente-Maritime.<\/strong><\/p>\n<h2>Marennes-Ol\u00e9ron oysters<\/h2>\n<p>Known for a very long time, since Roman times, oysters have made the reputation of\u00a0<strong>Marennes Ol\u00e9ron Basin<\/strong>. For many, it is the Rolls Royce of French oyster farming! The reason for this success? Ol\u00e9ron oysters benefit from a breeding and refining technique in &quot;claires&quot;, former salt marshes transformed into clay basins. There are four types of<a title=\"Marennes-Ol\u00e9ron PGI oysters\" href=\"https:\/\/camping-les-embruns-oleron.com\/en\/5-choses-a-savoir-sur-les-huitres-marennes-oleron\/\" target=\"_blank\" rel=\"noopener\">Marennes-Ol\u00e9ron PGI oysters<\/a>\u00a0: the fine de claire, the special claire, the fine de claire verte and the pousse en claire. A tradition that continues to this day.
